
VEG KEEMA PULAO
This is one recipe I converted from the original non- veg one which my mother used to make. Instead of using minced mutton, I used soya granules. Easier to make and faster too!
Ingredients:-
1. Basmati rice. 1.5 cups
2. Soya granules. 3/4 cup
3. Green peas. 1 small bowl
4. Onion 1
5. Tomato. 1
6. Ginger. 1/2″ piece
7. Garlic. 5- 6 pods
8. Turmeric powder. 1 Tsp ( haldi)
9. Red chilly powder. 1/2 Tsp
10. Coriander powder. 2 Tsps
11. Meat masala. 2 Tsps
12. Garam masala. 1 Tsp
13. Salt to taste
14. Green cardamom 2 ( chhoti elaichi)
15. Black cardamom 1 ( Bari elaichi)
16. Cloves. 3
17. Cinnamon 2 small sticks ( dalchini)
18. Black pepper corns. 5-6 ( sabut kali mirch)
19. Bay leaf. 2 ( tej patta)
20. Ghee. 3 Tbsp
21. Water. 3 cups
Method:-
1. Wash and soak rice for 1/2 hour
2. Soak soya granules in hot water for 10 minutes. Strain and squeeze dry.
3. Grind together onion, tomato, ginger and garlic to a fine paste.
4. Heat ghee in a heavy bottomed pan. Add green and black cardamom , bay leaf, cinnamon , cloves and pepper corns
5. Add onion tomato paste and fry for 2 minutes
6. Add all spices and fry for 5 minutes on slow heat.
7. Add peas and granules and fry for 5 minutes
8. Add drained rice and mix well
9. Add salt to taste
10. Add 3 cups water and bring to boil
11. Lower heat. Cover and cook till done.
12. Serve hot with raita.
